Recipe Friday: Strawberry Waffles


This morning, I made waffles for the first time without a mix! I modified a recipe I found on and they turned out really good. Not super fluffy waffles but that might have been because my baking powder is a little old. The recipe made eight waffles, so I ate one for breakfast and the rest I frozen individually on a baking rake for a couple of hours before putting into a bag. The plan will be to heat them up on the cast iron skillet when I want to eat them (since they are too big for the toaster).

Strawberry Waffles


  • 2 1/2 cups all-purpose flour
  • 4 teaspoons baking powder
  • 3/4 teaspoon salt
  • 2 cups almond milk
  • 1/2 cup plain, non fat Greek yogurt
  • 1/2 cup butter, melted
  • 3/4 cup chopped strawberries (more to taste)

I combined all the ingredients in a bowl and mixed them together (although I would fold in the strawberries after mixing in the rest of the ingredients next time I make this). I put my waffle maker on the highest setting (I tried on the middle setting but that one wasn't brown enough for my liking) and cooking 1/3 cup of mix at a time.

Top with whatever you enjoy! I spread peanut butter which melted wonderfully on top but you could top with extra fruit, fruit syrup, butter or regular syrup.
