Cheesecake...Oatmeal?

I’ve been experimenting with some new oatmeal things (because what better things do I have to do than create new breakfast options?) and wanted to share two new recipes I’ve come up with. Both use whipped cream cheese to create a cheesecake-like oatmeal with a lot of volume and without a ton of calories. Enjoy and be sure to let me know in the comments how you like them!

Jam Cheesecake Oatmeal

  • ½ cup oatmeal

  • 1 cup liquid

  • 2 tablespoons whipped cream cheese

  • 1 tablespoon jam of choice (I used raspberry)

Cook oatmeal and liquid according to instructions. Stir in whipped cream cheese and jam.

Pumpkin Cheesecake Oatmeal
 

  • ½ cup oatmeal

  • 1 cup liquid

  • 2 tablespoons whipped cream cheese

  • ½ cup pure pumpkin puree

  • Pumpkin pie spice

Cook oatmeal and liquid according to instructions. Stir in whipped cream cheese, pumpkin pie puree and pumpkin pie spice. (You may need a larger bowl than normal for this, it has tons of volume!)
