Quick Meal Idea: Chicken Quesadillas

One easy recipe I’ve been making lately is chicken quesadillas. They are super quick (especially if you have pre-cooked chicken on hand) and easy to change up the taste. Here’s how I make mine:

  • 1 chicken breast (I like to season mine with chili powder and cumin)

  • 1 tortilla

  • ¼ cup shredded cheese (we usually have either cheddar or mexican cheese on hand)

  • Extras (beans, cilantro, corn, peppers, ect)

  • Toppings (sour cream, salsa)

  1. If you haven’t already, cook your chicken breast. I prefer to cook mine in the oven at 375° for about 30 minutes then cube it)

  2. Mix together cubed chicken breast, cheese, and extras

  3. Place mixture on half of the tortilla and fold over

  4. Cook in a pre-heated pan until brown on both sides and cheese is melted

  5. Top and enjoy!

I’ve also made a couple of these at a time and reheated later, either in the microwave or oven. Wrap the quesadilla in tin foil if you reheat it in the oven to keep it extra crispy! 

Since I'm in marathon training and am eating large amounts of carbs, I make cilantro-lime rice on the side. But you could also enjoy it with cauliflower rice!
