One of my favorite things in July was the Golden Milk Overnight Oats from Budget Bytes. Since then, I’ve been modifying the recipe and eating it hot versus as overnight oats (since I’m no longer running before work with the weather/sunrise time change). So today, I’m sharing my version of Golden Milk oatmeal that sneaks in some vegetables and extra protein too!
Golden Milk Oatmeal
1 cup liquid of choice (I’m currently using almond milk)
½ cup oats
½ tsp turmeric
½ tsp cinnamon
¼ tsp ginger
1 pinch ground cloves
½ tsp honey
¾ cup shredded carrots
6 tbsp egg whites
2 tbsp ground flaxseeds
Bring liquid and shredded carrots to a low boil on the stove top.
Turn down heat slightly and stir in oats and spices.
Cook for 4-5 minutes until liquid is absorbed and oats are soft.
Stir in egg whites, ground flaxseeds and honey. Let cook for about 30 seconds more then enjoy!
